A simple and guilt-free birthday tart.

Ingredients needed:
For the cheesecake:
75 g Hookies Dragons cookies
50 g butter (at room temperature)
600 g cream cheese
4 eggs
120 g sugar
20 g corn starch
For the chocolate ganache (tart topping):
100 ml whipped cream
200 g milk chocolate for coating
To finish:
- 6-8 Hookies Dragons cookies
Preparation method:
1. Grease a 22 cm round mold with a bit of butter and line it with baking paper (on the bottom and sides).
2. Use a food processor to crush the Hookies Dragons cookies.
3. In a bowl, mix the crushed cookies with the butter (at room temperature) and press this mixture into the base of the round mold.
4. Bake the tart base in the oven at 180°C for about 15-17 minutes. Remove from the oven and let it cool.
5. Meanwhile, use a mixer to blend the cream cheese, eggs, sugar, and corn starch until smooth.
6. Pour this mixture into the round mold and bake at 160°C for 60 minutes. Remove from the oven and let it cool.
7. To make the chocolate ganache: heat the liquid cream in a saucepan until it starts to boil, stirring occasionally.
8. Finely chop the chocolate using a knife.
9. Place the chopped milk chocolate in a bowl and pour the hot cream over it. Stir well with a whisk until the chocolate ganache forms. Let it cool before topping the tart.
10. Once the tart has cooled, remove it from the mold.
11. Pour the cooled ganache over the tart.
12. Finally, decorate the tart with Hookies Dragons cookies around the edges.
